Hearts of Palm and Cherry Tomato Salad

Ingredients:

  • 1 jar/can of La Cima Hearts of Palm
  • 1 package of cherry tomatoes
  • About 1 tablespoon of basil (chopped)
  • Salt and pepper to taste

Dressing 

  • 4 tablespoons olive oil
  • 1 teaspoon of lime juice
  • 2 teaspoons of balsamic vinegar
  • Salt and pepper to taste

Preparation:

Let the hearts of palm slices drain well and cut the tomatoes in half.

Sprinkle the tomatoes with salt and ground fresh pepper; let them sit for a bit.

In a bowl mix the hearts of palm with the tomatoes, add the basil (chopped) and season with more salt to taste.

For the dressing: pour the vinegar and the lime juice in a bowl.  Add a dash of salt and black pepper, as well as the oil, use a fork to whisk.

Add the dressing to the rest of the mix and let it sit for 5 to10 minutes before serving.
