Hearts of Palm muffins


For the dough:
3 tablespoons of melted butter or neutral oil
2 cups of all-purpose flour
1/2 tablespoon of sugar
1 teaspoon of sea salt
3 teaspoons of baking powder
1 egg
1 cup of milk

For the filling, 1 cup of:
La Cima Hearts of Palm slices
Black olives

Preheat the oven to 400 °F
Grease twelve muffin molds with oil
Mix all the dought ingredients in a bowl. In another bowl beat the eggs, the oil (or butter) and the milk. Make a hole in the middle of the dought ingredients and pour the mixture there (milk, oil and eggs) and stir with a spatula or wooden spoon, until the ingredients are incorporated and the dought is formed
Mix the dought with the chopped Hearts of Palm, olives and parsley
Place the dough in the molds
Bake for about 20 to 30 minutes. Remove the mold from the oven and let it rest for 5 minutes
